Make Your Own Healthy Salad Dressing

Serve this fragrant, flavorful dressing with any green salad or toss with steamed veggies, if you like, It also makes a bold dipping sauce for spring rolls and dumplings

Ingredients:1 carrot, grated
2 tablespoons mirin
2 tablespoons rice vinegar or apple cider vinegar
1 tablespoon reduced-sodium soy sauce
1 tablespoon prepared mustard
1 tablespoon grated fresh ginger root

Method: 

Put all ingredients into a blender and purée until smooth.
