Detox Salad

Spring is almost here? Time to turn back the clocks this Sunday. It is the perfect time to do a detox, particularly after we’ve been breathing in poor indoor air quality, had less sunlight, and perhaps gotten less activity than usual. Detoxifying can be delicious.

My friend Denise Griggs Borgeest a certified health coach, knows a thing or two about   food for detox and weight loss posted this on her facebook page and was only to happy to share the recipe.

Such a great time of the year to clean up the body, the taxes and the closets. : )

Detox Salad


1 head broccoli, cut in florets
1 head cauliflower, cut in florets
1 cup carrots, julienned or chopped (who cares)
1 1/2 cups kale chopped
1 cup spinach chopped 

Please use only organic veggies!

Dressing
1/4 cup cider vinegar
1/4 cup water
5 dates pitted

Garnish
1/4 cup sunflower seeds
1/4cup pumpkin seeds
1/4 cup dried cranberries.

Blend well in vitamix or blender and blend until smooth( may need to double as salad absorbs the dressing quickly)

In batches, place broccoli and cauliflower florets into a food processor and pulse until loosely chopped. Empty into large bowl.
Next, add carrots,kale,and spinach into the bowl with cauliflower and broccoli. Mix together.

Dress salad with dressing and garnish with a sprinkle of seeds and cranberries
