Summer Bok Choy Salad with Pineapple and Almonds by Yonni Wattenmaker, Founder, Yon Appetit

This salad is a lovely, bright, Asian-inspired spring or summer dish and StacyKnows approved! The bok choy is a sharp, flavorful twist to lettuce, and offers a beautiful crunch while the pineapple and a nice dash of summer sweetness.

Healthy, great texture, interesting flavors…my new favorite for warm days:

Add the following ingredients to a large salad bowl:

  • 2 bok choy, well washed, base removed, and chopped
  • 1 bunch dill, chopped
  • 5 scallions, chopped
  • 3/4 cup fresh pineapple, diced
  • 1/2 cup raw almonds, whole or slivered
  • 1 TBSP hemp seeds

Either add right to the salad or in a small mixing bowl combine:

  • 1 TBSP rice wine vinegar
  • 2 tsp soy sauce
  • 2 tsp honey
  • 2 tsp sesame oil
