Looking for a colorful, creative and comforting for any evening at home?
I made this dish last week for dinner on quiet night at home. I just love looking through to my kitchen to see what I have on hand and how it all goes together!
In a medium bowl mix together:
1 cup cooked bulgur
2 cups shredded cabbage
3 chopped dates
1/8 cup chopped pecans
3 chopped mint leaves
2 TBSP dill
1.5 chopped scallions, green and white parts
1/3 cup cooked lentils
In a separate small bowl or glass, combine these dressing ingredients:
2 TBSP avocado oil
2 TBSP white wine vinegar
2 TBSP maple syrup
2 tsp mustard
