Stacy: What made you decide to write the book Cancer-Free with Food: A Step-by-Step Plan with 100+ Recipes to Fight Disease, Nourish Your Body & Restore Your Health?

Liana: After being diagnosed with a tumor in my neck, my doctors gave me two very different diagnoses and option plans.  Now that I am tumor free, I attribute this to radically adjusting my diet, nourishing my body with the right super foods, and listening to my body.  When you’ve been given the news that you have cancer, you feel like your whole world has been turned upside and the last thing you want to think about is what kind of super foods you should be eating. Best of all, these healthy and appealing meals can also be tailored for a gluten-free, keto, vegan, and paleo diet. Below is the recipe for Anticancer Muffins from my book.

ANTICANCER MUFFINS

This is an epic muffin recipe that makes a great breakfast because

it is delicious and filling and packed with loads of anticancer

ingredients. These are truly mind-blowingly tasty and

a must-try! They are also gluten-free, dairy-free, soy-free, and

egg-free. To make them even more anticancer potent, add one

apricot seed to each muffin—just poke one right in the middle

after pouring the mix into the muffin tin!

 

Total time: 50 minutes

Makes 12

Ingredients:

2 tablespoons flax meal

2 tablespoons filtered water

1/2 cup almond milk

1 teaspoon apple cider vinegar

1 1/2 teaspoons baking soda

2 organic apples or 1/2 cup

applesauce

1 tablespoon MCT oil

1/4 cup coconut oil

1/3 cup maple syrup

1/4 cup coconut sugar

1/2 teaspoon sea salt

1 cup organic blueberries

2 tablespoons chia seeds

Gluten-free flour mix:

1 tablespoon potato starch

2 tablespoons tapioca starch

1/4 cup tigernut flour

1 tablespoon brown rice flour

3/4 cup plant-based protein

powder, or more flour of any

mentioned here

1/4 cup almond flour

 

Actions:

  1. Preheat the oven to 375ºF and line a 12-cup muffin tray

with paper baking cups.

  1. Mix the flax and water together in a small cup until well

combined. Let the mixture sit for 10 minutes until it

becomes gummy like eggs. This is the egg replacement.

Set aside.

  1. In a separate bowl, mix the almond milk, apple cider vinegar,

and baking soda until well combined. Set aside.

  1. Peel and core the apples. Mix in a blender or food processor

with the MCT oil until you have an applesauce.

  1. In another, larger bowl, mix the coconut oil, maple syrup,

coconut sugar, and applesauce. Add the egg replacement

(see step 1) to this bowl and whisk.

  1. Add the almond milk mixture and stir well.
  2. Add the sea salt and gluten-free flour mix.
  3. Add the blueberries and chia seeds.
  4. Pour the batter evenly among 12 baking cups and bake for

24 minutes or until golden brown and you poke it with a

toothpick and it comes out dry.

  1. Let the muffins cool for 15 minutes.
