Libation ‘21 was created by internationally-acclaimed mixologist Benjamin Wood, and is based on Italicus (a bergamot liquor), lemon oil, sparkling wine and Peychaud’s bitters. It is garnished with an edible orchid and upcycled, pineapple fronds. “The flavors are incorporated using the old technique of ‘swizzling,’ derived from Tiki cocktail culture,” says Wood. “This drink is an homage to the island of Palm Beach, its rich history, and the sweet future that lies ahead. It’s a light, luxurious, celebratory, and easy-to-drink concoction that embraces the past and gazes towards the future.”
The minute I heard Le Bilboquet was looking for a Palm Beach location, I got on the phone with [owner] Philippe and told him that I had the perfect spot for him,” says Jane Holzer, a.k.a. Baby Jane, Palm Beach’s beloved entrepreneur, and international art collector. “Who knew Via Encantada would become such a hot dining destination? Then again, Philippe has that magic sauce.” Palm Beach follows in the footsteps of other successful restaurant openings for Philippe Delgrange’s Bilboquet Group, which includes dining destinations in Manhattan, Sag Harbor, Atlanta, Denver, and Dallas.
Le Bilboquet began in 1986 as an intimate boîte in Manhattan’s Upper Eastside. What started as a word-of-mouth space with 17 tables, quickly became Manhattan’s hottest ticket among the cognoscenti. Le Bilboquet attracts the most diverse and fascinating clientele from around the globe. And to commemorate its Palm Beach anniversary weekend, Le Bilboquet will offer their loyalists a complimentary cocktail called Libation ’21, a light, celebratory drink paying homage to the beauty of Palm Beach Island. “Moving to Palm Beach was a natural extension to our brand,” says Delgrange. “It’s been wonderful to see so many of our loyal New York clientele here, as well as getting to meet so many terrific, wonderful locals.”
