A Sit Down Dinner With Frank Pepe’s Grandson Gary Bimonte

This is definitely one of my favorite places to order pizza in Yonkers, if not all of Westchester. It ‘s worth knowing ahead of time that Pepe’s serves New Haven-style pies – large, very thin, Neapolitan pizzas.

Frank Pepe Pizzeria Napoletana is one of the oldest and best-known pizzerias in the United States. Known locally as Pepe’s, is has its Original Location in the Wooster Square neighborhood of New Haven, CT, as well as stores in Fairfield, Manchester and Danbury CT, the Mohegan Sun Casino in Uncasville, CT, and in Yonkers, NY.
There are currently 8 Frank Pepe”s restaurants and the 9th location will be opening in Waterbury CT.

Additionally 2 more restaurants are scheduled to open in the Boston area. One will be in Framingham MA and the other to be determined.

What makes the pizza’s better?

The tomatoes… each year the Pepe family goes to Italy during the growing season and handpicks the crops, then two containers (that’s a whopping 15,000 cases) of hand selected tomatoes are shipped to the US for their exclusive use.
The Sausage is handmade by a small firm that had been making the original recipe for years.

Where is table #3?  

Each table has a number yet you wont find a number 3 at any of their stores…dating back to the original store the line was so long that the fire marshal made them install a foyer…to do this
they had build a foyer and to do that they had to remove table #3…. the tradition continues to honor this so no Pepe’s has a #3
Gary Bimonte is one of 7 Grandchildren and while all the family still maintain a financial interest in the business…Gary continually travels to each store to
ensure that the quality of the original recipes and the customer service levels are maintained to the original New Haven standards.
The Oven which is coal fired has been recreated at each location brick by brick and working off the original oven blueprints the oven doors have been cast from
an original mold.

The original Pizza restaurant started by Frank Pepe was originally a traveling pushcart, but keeping track of who owed money was always problematic so
Franks wife suggested to open a store and let people come to them instead.
PS: Don’t forget to put money in the meter, they go til 8pm  $45 ticket
