The perfect salad on your high holiday table.
You can skip the walnuts if you prefer and if you don’t have fronds on your fennel that’s ok too.Ingredients:
* 2 fennel bulbs (with fronds, if available)
* 2 Honeycrisp apples (or apple of your choice)
* 5 celery ribs (include celery leaves if available)
* ¼ cup olive oil
* ¼ cup apple cider vinegar
* ¼ cup fresh lemon juice
* 1 tablespoon brown sugar
* 1 teaspoon salt
* ½ teaspoon black pepper
* ¼ cup crushed walnuts
Instructions:
1. Prepare the fennel: Remove the fronds from your fennel bulbs if available. Set the fronds aside for later. Thinly slice or shred the fennel and place it in a large salad bowl.
2. Slice the apple: Cut the apples into thin matchsticks and add them to the bowl with the fennel.
3. Prepare the celery: Thinly slice the celery ribs, including the leaves if available, and add them to the bowl as well.
4. Chop the fennel fronds: Finely chop the fennel fronds you set aside and keep them ready for garnish.
5. Make the dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, fresh lemon juice, brown sugar, salt, and black pepper. Mix well or shake in a jar until fully combined.
6. Assemble the salad: Top the fennel, apple, and celery mixture with the crushed walnuts and chopped fennel fronds. Drizzle the salad with the dressing and toss gently to combine.
